Rabbit al Salmorejo
"Conejo al salmorejo" a succulent dish based on rabbit meat. You find this in various restaurants. Following you find the recipe to prepare it yourself.



Ingredients:
1 rabbit (about 1kg.), 7-8 cloves of garlic, cooking salt to taste, 1 teaspoon cumin, a little oregano, 1 bay leaf, a little fresh parsley, 2 small glasses of white wine, a little vinegar, 1 small glass of oil, a little fresh thyme and a pinch of black pepper.
Cut the rabbit into pieces, peel the garlic and pound in a mortar with the rest of the ingredients - except the bay leaf, thyme, oil, vinegar and wine.  Transfer to a container (not aluminum). Add the oil, vinegar and the rest of the ingredients, including the meat and leave to marinate overnight.  The following day, fry the mixture slowly and serve with boiled potatoes, sweet potatoes, bread and a good Canarian wine.
